Thanks to
rebelfilms posting about it in passing, I have now made a successful potato soup! It never occurred to me before that all you have to do is boil, mash, and mix with enough liquid to make a soupy consistency. I think, though, that next time I should food-process the leeks in with the potatoes rather than leaving them in whole, cut the mushrooms into smaller pieces, not forget to use the white wine that was right behind me on the counter (duh), use chicken instead of beef broth (I knew this, but all we had was beef, so I used it), and use real bacon instead of turkey bacon (it's just not the same, smoke flavouring or no). All in all, though, pretty good, especially with improvised seasoning and all.
