Pretty high in saturated fat, from the egg yolk and cheese, actually. Perhaps balanced somewhat by the tomato, misc vegetables (cauliflower/green beans/squash/spinach), and olive sauce that was also left over from last night. But it's just the preciousness of cutting a circle of polenta with a biscuit cutter that gets me here.
That actually sounds kind of good, except for the part where I don't like goat cheese. But make it something like cheddar, muenster, mozzarella, or provolone, and I'm on board.
