Tonight's supper consisted of a tom yum soup, prepared in the "vegetable surprise" style: I used whatever looked good. Here's the tally:

1 can (2 cups) chicken or vegetable broth
1 medium carrot
1 small-medium white (boiling) potato
1 small-medium turnip
2-3 ounces green beans
1 cup "soup beans" (canned mix of pinto and kidney beans, and barley)
1 T minced garlic
about 1/3 cup chopped onion
1/2 cup lemon/lime juice
2 T red Thai chili paste
2 T tom yum soup flavouring
2 T fish sauce
1 small-medium tomato
1-2 oz looseleaf baby spinach

Chop everything up into soup-sized pieces. Put potato, carrot and turnip in a suitably sized pot and cover with chicken broth and 2 cups water. Bring not quite to a boil, then lower heat and simmer about 10 minutes. Meanwhile, saute onion and garlic. Add to soup along with green beans, juice, chili paste, tom yum mix, and fish sauce. Simmer another 5 minutes or so. Add tomato and spinach and simmer a final 5 minutes. Eat, and wonder if maybe you didn't overdo it on the tom yum by scraping the last bits out of the jar rather than strictly measuring 2 T.
